Heart Healthy Scallops With Tortellini Recipe
- 3/4 pound bay scallops
- Garlic to taste
- 2 tbsp. butter
- 1/2 c. minced scallions
- 1 pkg. cheese tortellini (prepared)
- Optional: Thinly sliced red pepper, fresh mushrooms, etc.
- Put water for tortellini on to boil.
- Wash, drain and pat dry scallops.
- In heavy frying pan saute/fry scallops in butter, garlic, and scallions.
- Cook for 5 to 7 min.
- Cook tortellini according to directions on package.
- Put tortellini and scallops in warmed serving dish and serve.
- Serves 2.
