Scotch (Butterscotch) Bars

  1. Preheat oven to 350 degrees.
  2. Lightly spoon flour into a dry measuring cup; level with a knife.
  3. Combine flour, and next 5 ingredients (through baking powder), stirring with a whisk.
  4. Set aside.
  5. Combine oil, vanilla, and egg whites; add to flour mixture, stirring just until blended.
  6. Lightly coat hands with cooking spray.
  7. Press batter evenly into an 8-inch square baking pan coated with cooking spray.
  8. Bake at 350 degrees for 18 minutes or until a wooden toothpick inserted in the center comes out clean.
  9. Cool in pan on a wire rack.
  10. Sift powdered sugar over top; cut into bars.
