Lamb Burgers
- 250 g frozen chopped spinach, thawed & squeezed dry
- 14 cup of fresh mint, finely chopped
- 1 tablespoon lemon juice
- 1 garlic clove, crushed
- 1 egg white, lightly beaten
- 500 g ground lamb
- 100 g feta cheese, crumbled
- 12 cup tzatziki
- 12 cup tomatoes, seeded & diced
- 4 crusty hamburger buns, split
- Combine spinach, mint, juice, garlic & egg white in a bowl, add lamb & feta and season well.
- Shape into 4 thick patties, cover & chill for 20 minutes.
- Preheat an oiled BBQ or char-grill and cook patties for 6-8 mins each side or until cooked to your liking, meanwhile combine tzatziki and tomato & toast the rolls.
- Place burgers on split rolls, dollop with tzatziki and garnish with with onion rings & extra sprigs of mint if desired.
