Spetzofai a la Christos
- 2 packages Hebrew National Hotdogs Largest Size 6 in a box
- 1 lb Large Green Peppers
- 1 lb Large Red Peppers
- 2 can Crushed Tomatoes HUNTS. 1lb each
- 1 large Onion or two smaller ones CHOPPED
- 1/2 cup Olive Oil
- 2 Bay Leaves
- 1 tsp Sugar
- 1 pinch Salt
- 1 pinch Ground Pepper
- Wash Pepeprs then remove the stalk and the seeds and cut them into large pieces
- Saute Peppers in hot oil on large fry pan until soft
- Chop and saute the onion in the large saucepan in the 1/2 cup of olive oil until soft
- Add the soft peppers to the saucepan with the onions and the crushed tomatos, the salt, the pepper, and sugar.
- Start simmering.
- Cut each hot dog into three parts and fry them on the frypan until warm and brown outside, not too much
- Once the Red Peppers soften (but not melt) throw in the hot dogs and continue simmering.
- Check and stirr every 15 minutes covered until the juices are reduced and then covered.
- Keep simmering for about an hour until peppers are softened well and red juices start emerging on the surface,
- Turn fire off and let sit for another 15 minutes then serve
