Clete'S Fettuccine Alfredo
- 16 oz. egg noodles
- 2 Tbsp. butter
- 1 small onion, thinly sliced
- 4 c. whipped (heavy) cream
- 2 Tbsp. freshly grated Parmesan cheese
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 4 qt. water
- 1 Tbsp. salt
- 2 Tbsp. freshly grated Parmesan
- 1 tsp. nutmeg
- freshly ground pepper
- Heat butter in 10-inch skillet over medium-high heat.
- Saute onion in butter. Stir in whipping cream; heat to boiling. Stir in 2 tablespoons cheese, 1 teaspoon nutmeg, 1/2 teaspoon salt and 1/2 teaspoon pepper; reduce heat.
- Simmer, uncovered, for 30 minutes, stirring frequently.
- Heat water and 1 tablespoon salt to boiling in large kettle; add fettuccine noodles. Boil, uncovered, until tender, but firm. Drain fettuccine. Mix fettuccine and sauce; top with 2 tablespoons cheese and 1 teaspoon nutmeg.
- Serve with pepper. Makes 4 servings.
