Beet Soup Recipe
- 1 bn beets peeled, halved, sliced
- 1 x beet greens washed and finely minced
- 3 stalk celery, diced
- 1 Tbsp. lemon juice salt & pepper to taste
- 1 lrg onion, diced
- 4 x carrots, sliced
- 1 Tbsp. vinegar
- 1 Tbsp. horseradish
- 1 can tomato soup
- Put vegetables in a large pot with water to cover.
- Add in remaining ingredients and mix thoroughly.
- Simmer 2 - 2 1/2 hrs, till beets and carrots are tender.
