Chicken Cordon Bleu Casserole

  1. Put the chicken, ham, half the cheese, & onion in a bowl.
  2. Set aside.
  3. In a pan melt 4 T of butter/margerine.
  4. Add the flour to make a roux.
  5. Pour in the half & half and milk and whisk until smooth and thick.
  6. Add more flour if needed.
  7. Salt & pepper to taste.
  8. Stir in mustard.
  9. Pour sauce over the chicken mixture.
  10. Mix well and pour into 9x13 baking dish.
  11. Melt 4 T of butter and mix with cornflakes and the rest of the grated cheese.
  12. Sprinkle over the chicken mixture.
  13. Bake for 25 minutes at 375 degrees .
  14. Serve over rice.
  15. (We like the brown variety at my house!)
