Tortellini With Sausage, Tomatoes and Cream
- 1 (20 ounce) package fresh tortellini
- 2 tablespoons olive oil
- 1 lb sweet Italian sausage, casings removed and crumbled
- 12 teaspoon red pepper flakes
- 12 cup onion, diced
- 3 garlic cloves, minced
- 1 12 cups heavy cream
- 1 (28 ounce) can plum tomatoes, drained and coarsely chopped
- 12 teaspoon salt
- 3 tablespoons fresh parsley, minced
- Bring a large pot of lightly salted water to a boil.
- Cook pasta in boiling water for 6 to 8 minutes, drain.
- Heat oil in large skillet over medium heat.
- Add sausage and pepper flakes.
- Cook until sausage is no longer pink, stirring often, about 8 minutes, drain.
- Add onion and garlic to skillet and cook until onion is tender and sausage is light brown, stirring often, about 7 minutes.
- Stir in cream, tomatoes, salt and parsley.
- Simmer until mixture thickens slightly, about 5 minutes.
- Stir cooked pasta into sauce, and heat through.
