Basic Jelly Roll Recipe

  1. Beat Large eggs till light; add in sugar gradually, beating till thick and smooth.
  2. Add in lemon rind.
  3. Sift flour with baking pwdr and salt; add in alternately with lowfat milk to egg mix.
  4. Pour into shallow 14 x 10 inch pan lined with waxed paper.
  5. Bake in preheated 350 degree oven for 15 to 20 min.
  6. Turn out onto damp cloth.
  7. Spread with jelly; roll up.
  8. Wrap in waxed paper; cold.
  9. Sprinkle with confectioners' sugar just before serving.
  10. Yield: 6 to 8 servings.
