Basic Jelly Roll Recipe
- 2 Large eggs
- 3/4 c. plus 2 tbsp. sugar
- Grated rind of 1 lemon
- 1 c. flour
- 1 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 3 tbsp. lowfat milk
- Jelly
- Confectioners' sugar
- Beat Large eggs till light; add in sugar gradually, beating till thick and smooth.
- Add in lemon rind.
- Sift flour with baking pwdr and salt; add in alternately with lowfat milk to egg mix.
- Pour into shallow 14 x 10 inch pan lined with waxed paper.
- Bake in preheated 350 degree oven for 15 to 20 min.
- Turn out onto damp cloth.
- Spread with jelly; roll up.
- Wrap in waxed paper; cold.
- Sprinkle with confectioners' sugar just before serving.
- Yield: 6 to 8 servings.
