Aunt Beulah's Meatless Carrot Loaf

  1. Peel and cook carrots until tender.
  2. Measure out 3 cups carrots, drain & mash well.
  3. Add peanut butter to hot mashed carrots; then eggs, sage, peppers, onion, juice & cereal.
  4. Mix well and pour into a lightly greased bread loaf pan.
  5. Bake at 350 for 1 1/2 hours or until the edges are light brown and a toothpick comes out clean.
  6. Let cool 15 minutes and serve warm or cold.
