Mandarin Orange Chicken
- 1 chicken breast, cut into 1 in. pieces
- 12 green bell pepper, sliced
- 2 tablespoons white onions (diced)
- 1 (3 ounce) can orange sections (preferably in water)
- 14 cup frozen corn
- 1 tablespoon sesame oil
- 2 12 tablespoons soy sauce
- 1 teaspoon ginger (ground)
- 12 teaspoon sugar
- 1 teaspoon honey
- Drain the can of orange segments, rinse.
- Mix ginger, sugar, sesame oil and soy sauce, let heat gently in frying pan.
- Add chicken pieces and chopped onion, saute over medium high heat till chicken is white.
- Add corn and bell pepper, saute for three minutes.
- Add drained and rinsed oranges, and then spoon honey over mixture.
- Saute for ten minutes, raise heat to high if desired.
- Check chicken pieces with a toothpick to see if ready, there should still be a fair amount of liquid in the pan.
- Serve with rice.
