Tuna Pasta Salad
- 300 grams pasta
- 1 small tin of tuna. drained
- 1 small onion finely diced
- 1 clove garlic, crushed to smooth paste
- 1 cup cucumber diced
- 1/2 medium red pepper diced
- 3 tbsp heaped of mayonnaise
- 2 pinch salt and pepper
- Cook pasta according to the instructions
- Drain pasta.
- Add butter and onions to the pan and return to the heat for 1 minute.
- Remove from the heat and add the garlic and pasta.
- Stir
- Break up the tuna with a fork and stir into the pasta
- Add the cucumber, red pepper, salt and pepper and mayonnaise.
- Stir until evenly combined
- Serve with crusty bread or crumble ready salted crisps (a.k.a potato chips) over the top.
- Optional: diced tomatoes, green/spring onions, bacon bits, parmesan cheese, swap tuna for cooked chicken
