Blackberry Walnut Cheesecake Recipe
- For Walnut
- 1 1/2 c. Finely minced walnuts
- 1/2 c. Flour
- 2 Tbsp. Butter, softened For
- 32 ounce Cream cheese, softened
- 1 1/2 c. Sugar
- 1 Tbsp. Flour
- 1 tsp Vanilla
- 2 x Large eggs
- 1 c. Fresh or possibly frzn Blackberries, coarsely minced Blackberries coarsely minced
- For crust: mix all ingredients till dough forms.
- Press in bottom of ungreased 9O springform pan.
- Bake 10 to 12 min or possibly till edges are golden.
- Heat oven to 4001/4.
- Bake crust and cold.
- Reduce oven to 3251/4.
- Beat cream cheese, sugar, flour, and vanilla in large bowl on low speed till fluffy.
- While mixer is running on low speed, beat in Large eggs.
- Beat on medium speed 1 minute, scraping bowl occasionally.
- Mix in Blackberries.
- Spread mix over crust.
- Bake about 55 min or possibly till center is set.
- Cold 30 min on wire rack.
- Chill at least 3 hrs.
- Remove side of pan.
