Radish and Cucumber Slaw

  1. In a large bowl, whisk together the cider vinegar, canola oil and sugar.
  2. Season with salt and pepper.
  3. Add the cilantro, scallions, three-quarters of the cabbage (reserve the remaining cabbage for another use, such as Round 2 Recipe Cabbage and Beef Stir Fry), cucumbers and radishes.
  4. Toss to combine.
  5. Cover and keep in the refrigerator until ready to serve.
