Low Sugar Soy Flour and Wheat Bran Bread
- 70 grams Superfine soy flour
- 50 grams Wheat bran flour (it doesn't have to be superfine)
- 70 grams Gluten-free flour
- 17 grams Olive oil (or shortening)
- 2 tsp Artificial sweetener
- 4 grams Dry yeast
- 2 grams Salt
- 170 ml Water
- Put the ingredients in a plastic bag, and shake well to mix.
- First, pour the water into the bread machine.
- Add the mixture from Step 1 to the bread machine, and place the non-sugar sweetener and dried yeast on top next to each other.
- Do not use the automatic yeast dispenser.
- Add the olive oil (shortening), but be careful not to pour it over the dried yeast.
- Set the bread machine to "Rapid Bake" and "Light Crust Color," and turn it on.
- Those settings may be called differently depending on your bread machine, but select the quick bake setting.
- If you turn the machine off after kneading, and turn on the switch again to repeat the kneading operation, the dough will turn out better.
- The aim of this recipe is to make low-sugar bread cheaply (in terms of energy costs), so you can omit Step 6.
- The bread in the profile photo was made with Step 6 skipped.
