Mixed Fruit Compote Recipe
- 2 c. water
- 1/2 c. dry apricot halves
- 1/2 c. small pitted prunes
- 2 tbsp. golden brown raisins
- 6 whole allspice
- 2 (2 inch) sticks cinnamon
- 1 (16 ounce.) can chunky mixed fruits in juice, undrained
- 1 (11 ounce.) can mandarin oranges in lite syrup, undrained
- Combine first 6 ingredients in a saucepan; bring to a boil.
- Cover, reduce heat, and simmer 8 min or possibly till tender.
- Combine apricot mix and remaining ingredients in a large bowl; stir gently.
- Cover and store in refrigerator up to 5 days.
- Throw away allspice and cinnamon sticks before serving.
- Yield: 12 servings (about 75 calories per 1/2 c. serving).
