Tofu Scramble

  1. Heat a non-stick frying pan over medium heat, add oil.
  2. Saute the vegetables until softened and golden.
  3. Add the spices and stir to combine.
  4. Add the salsa.
  5. Cut the tofu into small cubes and add to the vegetables and spices.
  6. Mash the tofu with the back of a wooden spoon, add salt.
  7. Stir and cook until hot.
  8. Softer tofu will take a longer time for the moisture to evaporate than firm tofu.
  9. But cook to your desired consistency.
  10. Season to taste.
