Halibut with Mushroom Rice Pilaf
- 1 lb. halibut fillets
- 1/4 cup KRAFT Greek Vinaigrette Dressing, divided
- 2 cups sliced fresh mushrooms
- 1-1/4 cups water
- 1-1/2 cups instant brown rice, uncooked
- 1 cup frozen peas, thawed
- Preheat oven to 450F.
- Place fish in shallow baking dish.
- Drizzle with 2 Tbsp.
- of the dressing.
- Bake 15 min.
- or until fish flakes easily with fork.
- Meanwhile, cook mushrooms in remaining 2 Tbsp.
- dressing in medium skillet 3 to 4 min.
- or until mushrooms are tender, stirring occasionally.
- Add water; bring to boil.
- Stir in rice and peas; cover.
- Simmer 5 min.
- Remove from heat; let stand 5 min.
- Spoon onto four serving plates.
- Top with the fish.
