Macaroni and Cheese With Cauliflower
- 2 cups cauliflower, chopped very, very finely
- 2 cups uncooked macaroni
- 2 tablespoons butter
- 2 tablespoons flour
- 1 12 cups milk
- 6 ounces American cheese
- 6 ounces cheddar cheese, shredded
- Cook macaroni in water about 10 minutes, or until tender but still firm.
- While the macaroni is cooking, place cauliflower in microwave safe bowl with 2 T water.
- Cover bowl and microwave 2 to 4 minutes to steam cook the cauliflower.
- Microwaves very, so check often.
- Once macaroni is done, drain water and return to pan.
- Mix in the cooked cauliflower.
- In a saucepan, melt butter, whisk in the flour and mix well.
- Slowly whisk in the milk until completely incorporated.
- Cook until slightly thickened and bubbly.
- Add cheese, stirring until melted and smooth.
- Pour over the macaroni mixture.
- Heat for two minutes, stirring constantly.
- Serve.
