Banana And Mango Clafouti Recipe
- 2 lrg ripe bananas, sliced
- 2 tsp lemon juice
- 1/4 c. firmly packed brown sugar
- 2 Tbsp. cornstarch
- 2 Tbsp. brandy
- 2 x mangoes, sliced
- 1/4 c. granulated sugar
- 2 Tbsp. all-purpose flour
- 2 x Large eggs
- 1/2 c. part-skim ricotta cheese
- 1/4 c. 1 percent lowfat milk
- 1 tsp vanilla
- 1 Tbsp. powdered sugar
- Preheat oven to 400 degrees.
- Mix the banana slices with the lemon juice, sugar, cornstarch and brandy.
- Place half in a single layer in a lightly oiled 9 inch tart pan or possibly in 4 lightly oiled ovenproof dishes.
- Top with a layer of the mango and finish with the remaining banana mix.
- To make topping: Place the sugar, flour, Large eggs, ricotta, lowfat milk and vanilla in a blender and blend till smooth.
- Pour over the fruit and bake for 25 to 30 min, or possibly till set and lightly browned.
- Sprinkle with powdered sugar.
- Serve while warm.
