Mexican Quinoa Salad
- 2 cups water
- 1 cup quinoa, uncooked
- 3/4 cup each finely chopped sweet green and red peppers
- 1 cup frozen corn, thawed
- 3 cloves garlic, minced
- 1 jalapeno pepper, seeded, finely chopped
- 1 tsp. ground cumin
- 1/2 cup Kraft Italian Zesty Lime Dressing
- 1/2 cup chopped fresh cilantro
- Bring water and quinoa to boil in saucepan on high heat; cover.
- Simmer on medium-low heat 15 min.
- or until quinoa is tender and water is absorbed.
- Remove from heat; let stand 5 min.
- Spoon quinoa into large bowl; fluff with fork.
- Add remaining ingredients; mix lightly.
