Red Pepper and Tomato Soup
- 4 cups store bought roasted pepper and tomato soup (pacific natural is the brand i've used)
- 1 13 cups cooked wild rice
- 34 cup sliced mushrooms
- 34 cup firm tofu or 34 cup extra firm tofu
- zest from one lemon
- 3 garlic cloves, chopped
- salt
- black pepper
- crushed red pepper flakes (optional)
- Pour soup in a pot.
- Add cooked wild rice.
- Add mushrooms.
- Add tofu.
- Add garlic.
- Simmer over medium heat; about 15 minutes.
- Add lemon zest.
- Add salt, black pepper, and crushed red pepper to liking.
