Tofu and Carrot Pittas
- 25 g tofu
- 25 g carrots
- 12 spring onion
- salt
- pepper
- 1 tablespoon raisins
- 1 pita bread
- Brush the sandwich toaster with a little sunflower oil and preheat to its highest setting.
- Mix together the tofu, carrot, onion, seasoning, and raisins.
- Very carefully split the pitta bread open with a sharp knife taking care not to puncture the crust.
- Stuff the carrot mixture into the pitta and flatten out the filling to give an evenly filled sandwich.
- Place the pitta in the toaster, close the lid, and cook for 5 minutes until the pitta is crisp.
