Kicked Up Shrimp
- 1 pound Raw Shrimp, Tail On
- 1/4 cups Olive Oil
- 1 whole Lime, Juiced
- 1 Tablespoon Honey
- 1/2 Tablespoons Dried Thyme
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1/2 teaspoons Cayenne Pepper
- 1 whole Handful Cilantro, Finely Chopped
- 1 whole Small Jalapeno, Minced
- 2 cloves Garlic, Finely Chopped
- If using frozen shrimp, place in colander under cold running water for 3-5 minutes until thawed.
- Let drain while mixing together the marinade.
- In a small mixing bowl, combine olive oil, lime juice, honey, thyme, cumin, paprika, cayenne pepper, cilantro, jalapeno and garlic.
- In a shallow baking dish, spread the shrimp out in a single layer.
- Pour the marinade over the shrimp and turn them once or twice so they are fully coated.
- Cover with plastic wrap and refrigerate for 2-3 hours.
- Skewer shrimp before cooking.
- 5-6 per skewer should be just right.
- Grill over medium heat for 3 minutes on each side.
- Be careful not to overcook them.
- *Cooks note: this recipe served four with lots of grilled vegetables and pasta salad to complete the dish.
- If the shrimp will be the main event, these quantities will better serve 2-3.
- Double the recipe if youll be serving more than that.
