Kicked Up Shrimp

  1. If using frozen shrimp, place in colander under cold running water for 3-5 minutes until thawed.
  2. Let drain while mixing together the marinade.
  3. In a small mixing bowl, combine olive oil, lime juice, honey, thyme, cumin, paprika, cayenne pepper, cilantro, jalapeno and garlic.
  4. In a shallow baking dish, spread the shrimp out in a single layer.
  5. Pour the marinade over the shrimp and turn them once or twice so they are fully coated.
  6. Cover with plastic wrap and refrigerate for 2-3 hours.
  7. Skewer shrimp before cooking.
  8. 5-6 per skewer should be just right.
  9. Grill over medium heat for 3 minutes on each side.
  10. Be careful not to overcook them.
  11. *Cooks note: this recipe served four with lots of grilled vegetables and pasta salad to complete the dish.
  12. If the shrimp will be the main event, these quantities will better serve 2-3.
  13. Double the recipe if youll be serving more than that.
