The Candidate

  1. Combine the Scotch, ginger liqueur, lemon juice, and simple syrup in a shaker with ice; shake it up really well to break the ice into shards.
  2. Strain the cocktail into 2 chilled martini glasses and garnish each with crystallized ginger.
  3. Combine the sugar and water in a pot over medium heat.
  4. Gently simmer for 2 minutes, swirling the pot now and then, until the sugar is dissolved and the liquid becomes clear.
  5. Do not allow the syrup to boil or get dark.
  6. Cool completely and use to sweeten mixed drinks or iced tea.
  7. Keeps nearly indefinitely, refrigerated.
