The Candidate
- 4 ounces (1/2 cup) Scotch, such as Chivas Regal 12-year Scotch whiskey
- 1 ounce (2 tablespoons) ginger liqueur, such as Domaine de Canton
- 1/2 ounce (1 tablespoon) freshly squeezed lemon juice
- 1/2 ounce (1 tablespoon) Simple Syrup (recipe follows)
- Crystallized ginger wheels
- 1 cup sugar
- 1 cup water
- (makes about 1 cup)
- Combine the Scotch, ginger liqueur, lemon juice, and simple syrup in a shaker with ice; shake it up really well to break the ice into shards.
- Strain the cocktail into 2 chilled martini glasses and garnish each with crystallized ginger.
- Combine the sugar and water in a pot over medium heat.
- Gently simmer for 2 minutes, swirling the pot now and then, until the sugar is dissolved and the liquid becomes clear.
- Do not allow the syrup to boil or get dark.
- Cool completely and use to sweeten mixed drinks or iced tea.
- Keeps nearly indefinitely, refrigerated.
