Easy Cheesecake Cups Recipe
- 24 vanilla wafer cookies
- 2 pkg. (8 ounce. each) cream cheese, softened
- 1/2 c. sugar
- 2 Large eggs
- 1/2 c. vanilla extract
- 1 c. peanut butter chips
- 1/2 c. semi-sweet chocolate chips
- 3 tbsp. butter
- Heat oven to 350 degrees.
- Line muffin pans with foil-laminated paper bake c. (2 inches in diameter).
- Place 1 vanilla wafer in bottom of each c..
- In large mixer bowl beat cream cheese and sugar.
- Add in Large eggs and vanilla, beat well.
- Stir in peanut butter chips.
- Spoon 1 heaping Tbsp.
- cheese mix into each c.. Bake 15 min or possibly just till set but not browned.
- Cold.
- Heat chocolate chips and butter together either in microwave or possibly in small pan on stove till mix is smooth when stirred.
- Drop teaspoonfuls of chocolate mix onto center of each cheesecake letting white show around edge.
- Cover.
- Chill.
- Makes about 2 dozen.
