Mushroom White Wine Chicken with Pizzaz
- Olive Oil Or Butter
- 4 whole Chicken Quarters, Trimmed
- Salt To Taste
- Pepper To Taste
- 4 cups Mushrooms, Sliced
- 2 cloves Chopped Garlic
- Half An Onion, Diced
- 1/4 cups Chicken Or Vegetable Broth
- 1/2 cups Dry White Wine
- 1 cup Cream
- 1 Tablespoon Sour Cream (optional)
- Frank's (or Louisiana Hot Sauce), To Taste
- CHICKEN:
- 1.
- Preheat oven to 350F
- 2.
- Heat a large non-stick skillet over medium heat, add some oil or butter to pan.
- 3.
- Rub chicken with salt and pepper
- 4.
- Brown chicken for 2 minutes each side until it shows some colour, remove and place onto baking tray.
- 5.
- Bake chicken for 15 minutes or until cooked through
- SAUCE:
- 1.
- Add oil or butter to the same pan, along with the mushrooms, garlic and onions.
- 2.
- Cook down until onions are translucent and mushrooms are softened.
- 3.
- Add stock and white wine and simmer for around 4-5 minutes.
- 4.
- Add cream (and sour cream, if thats what you want) and cook, stirring frequently until sauce has thickened.
- 4.5 .
- Add the Franks here too for a very slight kick.
- Slather that sauce over the chicken!
- Serve it with rice, or pasta, or salad or whatever your heart desires.
