Blue Cheese and Walnut Toasts

  1. Preheat oven to 400F.
  2. Brush 1 side of baguette slices with melted butter.
  3. Place slices on baking sheet and bake until just golden brown on edges, about 7 minutes.
  4. Cool slightly.
  5. (Can be prepared 2 days ahead; store in airtight container.)
  6. Preheat oven to 400F.
  7. Combine blue cheese and butter in small bowl.
  8. Season generously with pepper.
  9. Spread toasted baguette slices with cheese mixture.
  10. Sprinkle cheese mixture with walnuts.
  11. Place toasts on baking sheet and bake until cheese mixture is bubbly, about 6 minutes.
  12. Sprinkle with parsley if desired and serve.
