Oatmeal Molasses Cookies
- 8 c. flour
- 1/2 c. flour (reserve)
- 1 Tbsp. salt
- 2 Tbsp. soda
- 8 c. oats (quick)
- 2 c. melted shortening
- 2 c. light molasses
- 4 eggs, beaten
- 1/4 c. hot water
- 2 c. ground pecans
- 3 c. seedless raisins
- 2 1/2 c. sugar
- 1 Tbsp. ginger
- Sift together the 8 cups flour, salt and soda.
- Mix oatmeal, sugar and ginger.
- Stir in melted shortening, molasses, eggs, water, sifted dry ingredients, nuts and raisins. Work dough by hand until well mixed. Add 1/2 cup flour if needed. Roll portions of dough to 1/4-inch thickness.
- Cut with 3 1/2-inch cutter. Place on lightly greased sheets. Brush with water and sprinkle with sugar.
- Bake at 375u0b0 for 8 to 10 minutes.
