Santa Fe Stuffed Peppers

  1. Prep peppers by cutting off top and removing stems, seeds and membranes.
  2. Boil water and submerge peppers for 3 minutes.
  3. Set aside.
  4. Preheat oven to 350.
  5. Brown turkey, onion and garlic.
  6. Add beans, tomatoes and rice/quinoa mix, taco sauce and spices and stir together thoroughly.
  7. Let simmer 7-10 minutes then stir in half the cheese.
  8. Place peppers in 2 qt baking dish and stuff with meat mixture.
  9. Top with remaining cheese and taco sauce.
  10. Bake 15 minutes til cheese is browned and bubbly.
