Santa Fe Stuffed Peppers
- 1 lb ground turkey
- 1 medium onion, chopped
- 3 clove garlic, minced
- 1 can red beans with chili seasoning, drained
- 1 can salsa-style fire roasted tomatoes
- 1 packages Simple Truth Organic Red quinoa and brown rice (frozen)
- 1 tbsp chili powder
- 2 tsp ground cumin
- 6 tbsp mild taco sauce
- 4 oz pepperjack cheese, shredded, divided
- 4 large red, yellow or orange peppers
- Prep peppers by cutting off top and removing stems, seeds and membranes.
- Boil water and submerge peppers for 3 minutes.
- Set aside.
- Preheat oven to 350.
- Brown turkey, onion and garlic.
- Add beans, tomatoes and rice/quinoa mix, taco sauce and spices and stir together thoroughly.
- Let simmer 7-10 minutes then stir in half the cheese.
- Place peppers in 2 qt baking dish and stuff with meat mixture.
- Top with remaining cheese and taco sauce.
- Bake 15 minutes til cheese is browned and bubbly.
