Stir Fried Bok Choy with Teriyaki Glaze

  1. Trim ends of bok choy.
  2. Wash, pat dry with paper towels, and then set aside.
  3. In a small saucepan add soy sauce, sake, brown sugar, and rice vinegar.
  4. Heat and stir until the brown sugar is dissolved.
  5. Remove from heat and set aside.
  6. Heat a large skillet or wok over medium-high heat.
  7. Add oil and ginger.
  8. Cook ginger until soft and then add bok choy.
  9. Cook for 1-2 minutes, or until the bok choy is just wilted.
  10. Stir in teriyaki sauce and tomatoes.
  11. Cook for another 30 seconds, or until heated through.
  12. Serve warm.
