Dashi

  1. Bring 3 cups water to a boil in a small saucepan.
  2. Wipe off the kombu, add to the boiling water, and let boil for 3 minutes.
  3. Add the bonito flakes, remove from the heat, and let sit for 30 minutes.
  4. Strain, then add the soy sauce, mirin, and lime juice; serve hot or chilled.
  5. Dashi should be used within a few hours.
