Dutch Oven Chicken Jumble

  1. If you are cooking this outside in a Dutch oven, you will want to start your coals about 10 minutes before you begin your prep.
  2. Since this dish has bacon and cheese in it, you will want to line your Dutch oven with tin foil to aid in cleanup.
  3. If you are doing it inside, preheat your oven to 400 degrees F.
  4. Cut chicken into cubes and place in a mixing bowl.
  5. Peel and slice the carrots into 1/2 pieces and add to the chicken.
  6. Peel potatoes and cut into large cubes; add to the chicken and carrots.
  7. Pour in oil and toss the mixture.
  8. Add salt and pepper to mixture and toss again.
  9. Once the coals are ready, place the Dutch oven on them and lay the bacon in the bottom to cook.
  10. If you are doing this inside, place a large, heavy baking dish or Dutch oven on a burner over medium heat.
  11. While the bacon is cooking, peel and slice onions.
  12. Once bacon is crisp, remove the strips to a paper towel to drain and add the sliced onions to the bacon fat.
  13. Saute until they are translucent and soft.
  14. While the onions are cooking, rough chop the bacon and add it to the mixing bowl.
  15. Add the onions when they are done, stir and pour the entire mixture into the Dutch oven.
  16. Cover the Dutch oven and add coals to the lid, allow to cook for 45 minutes.
  17. If you are doing this in an oven, cover the baking dish with a lid or tinfoil and allow to bake for 45 minutes.
  18. At the 45-minute mark, remove from the heat and uncover.
  19. Add half of the cheese and stir.
  20. Sprinkle the remaining half of the cheese on the top and replace the pan lid/cover/tinfoil and return to the coals/oven for another 10 minutes.
  21. Remove from heat, uncover and allow to cool for 10 minutes before serving.
