Honey Mustard Chicken with Creamy Potatoes

  1. Steam or microwave the potatoes until tender.
  2. Mash with a fork or potato masher until smooth and stir through cream cheese spread, chives, milk, salt, and pepper until well combined.
  3. Keep warm.
  4. Brush combined mustard and honey over the chicken fillets to coat.
  5. Heat a grill pan over medium heat and char-grill or pan-fry chicken for about 5 minutes each side or until cooked through.
  6. Serve mashed potatoes onto four individual serving plates and top with chicken.
  7. Accompany with steamed greens, if desired.
