Brenda'sVegetable casserole
- 1 small onion, diced small
- 1 tbsp minced garlic
- 1 large yellow squash, halved & sliced thin
- 1 large zucchini squash, halved & sliced thin
- 1 large yellow potato, halved & sliced thin
- 1 small jar favorite marinara or spaghetti sauce (about 2 cups)
- 1 cup shredded Italian style cheese
- 1 olive oil for sauting
- Preheat oven to 400
- Spray 2 quart casserole dish with Pam
- Spread mixed vegetables in dish
- Saute onion & garlic in small amount of olive oil till soft.
- Spread garlic onion mixture over vegetables.
- Salt & pepper to taste
- Spread sauce over top, cover with foil and bake for 30 minutes.
- Uncover and bake for another 15 minutes or until vegetables are fork tender.
- Sprinkle with cheese and leave in oven turned off until cheese is lightly browned.
