Italian Meatloaf
- 1 lb ground beef
- 1 each red onion
- 1 each red bell pepper
- 2 tbsp chopped garlic
- 2 tbsp olive oil
- 3/4 cup Italian bread crumbs
- 1/2 cup red wine
- 2 tbsp fresh chopped basil
- 2 each eggs
- 1/4 cup grated parmesan
- 2 tbsp Worcestershire sauce
- 4 tbsp balsamic vinegar
- 1 1/2 cup mariana sauce
- Pre-heat oven to 375F
- chop onion and pepper
- heat oil in pan and add onion pepper and garlic.
- cook until onions are translucent.
- Add wine and half of the balsamic vinegar.
- Simmer for 5 min.
- place aside to cool.
- combine all remaining ingredients in a mixing bowl until fully incorporated.
- Fold in cooled onion and pepper mixture
- Form mixture into a baking pan.
- Cover with mariana sauce and bake until internal temp of 165F.
