Stuffed Cherry Tomatoes - Cucumber Stuffed Tomatoes

  1. Drain cucumber on paper towel.
  2. In a small bowl, combine cream cheee, dill, garlic powder, and 1 tsp (5 ml) onion.
  3. Add cucumber.
  4. Cover and refrigerate 20 minutes or more.
  5. Rinse and dry tomatoes, cut off tops, scoop out pulp.
  6. Invert on paper towel to drain.
  7. Spoon cheese mixture into tomato shells, garnish with remaining onion.
