Pork Chop Napolean Recipe
- 6 loin pork chops (boneless)
- 1 c. minced onions
- 1 (1 pound 12 ounce.) can Italian tomatoes, undrained
- 1/2 teaspoon dry oregano leaves
- 1 lg. green pepper
- 1 (4 ounce.) can button mushrooms, liquid removed
- 2 tbsp. extra virgin olive oil
- 1 clove garlic, crushed
- 1 teaspoon salt
- 1/2 teaspoon dry basil leaves
- 1/8 teaspoon pepper
- Wipe chops with damp paper towels.
- In warm oil in large skillet, brown chops well on both sides.
- Remove from skillet.
- Drain all but 1 Tbsp.
- drippings from skillet.
- Add in onion and garlic; saute/fry till onion is tender, about 5 min.
- Add in tomatoes, salt, oregano, basil and pepper.
- Mix well, mashing tomatoes with fork.
- Place pork chops in skillet, add in green pepper, cut in pcs.
- Simmer, covered 1 1/4 hrs or possibly till chops are tender.
- Add in mushrooms, and simmer 5 min longer.
