Parsnips in Maple Mustard Sauce
- 2 tablespoons pure maple syrup
- 1 teaspoon Dijon-style mustard
- 2 tablespoons unsalted butter, cut into bits
- 2 large parsnips (about 1/2 pound), peeled and cut into 3- by 1/4-inch sticks
- In a microwave-safe shallow baking dish combine the syrup, the mustard, the butter, and salt and pepper to taste, add the parsnips, and toss them to coat them well.
- Microwave the parsnips, covered partially, at high power (100%) for 10 minutes, or until they are tender.
