Ghana Ground Nut Stew
- 1 small onions chopped
- 49.5 ounces chicken broth 1 large can
- 16 ounces peanut butter 1 jar, natural
- 6 ounces tomato paste 1 small can
- 1 1/2 pounds spinach, frozen 1 large package, (or any other veggie)
- 4 pounds chicken up to 6 pounds, 1 whole chicken, cooked, deboned, and cut into bite size pieces. (precooked ones in deli make it easy!!)
- 1 x salt and black pepper to taste
- 1 x chili pepper flakes to taste
- Editor's Note: I have seen a version of this recipe that also included chopped tomatoes and okra.

- In a large pot, saute onion with a little butter or margarine.
- 2.
- Add chicken broth 3.
- Heat to a boil then had a heaping tablespoon of peanut butter.
- Stir to melt before adding next tablespoonful.
- 4.
- Add tomato paste, stir.
- 5.
- Add cut up chicken and spinach or other vegetables 6.
- Add salt, pepper, and chili peppers to taste.
- 7.
- Heat and serve over rice.
