Ray's' The Ultimate Quesadilla Platter

• 4 cup shredded cheese of choice
• 1 cup Mexican queso fresco cheese
• 1 jar salsa
• 1 bushel cilantro
• 1 lb carne Al pastor
• 1/2 lb marinated diced chicken
• 1 cooking spray
• 1/2 can chipotle
• 1 large flour tortillas

1. I bought the pre marinated carne Al pastor & chicken, cook and chopped.
2. set aside
3. Spray the pan with cooking spray add tortilla both cheeses as much as you like, add meat, a little cilantro, & chipotle amount of choice close tortilla and cook both sides till crispy goodness.
4. serve with salsa, I like to warm in a small bowl add in chopped cilantro and serve in center.
5. Sprinkle Mexican cheese around & cilantro.
