Toasty Tostadas
- 1 cup green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 cup green pepper, thinly sliced
- 1 cup corn kernel
- 12 cup light mayonnaise
- 1 tablespoon granulated sugar
- 12 teaspoon salt
- 12 teaspoon pepper
- 2 cups cooked chicken, shredded
- monterey jack cheese, shredded
- green onion, thinly sliced
- tomatoes
- coriander sprig
- In a bowl, toss red and green cabbage, green peppers, corn, mayonnaise, sugar, salt and pepper until combined.
- Warm tostadas in a 350F oven until warmed through, about 2 minutes.
- Top each tostada with chicken, cabbage mixture, cheese, green onions, tomatoes, and coriander.
