Chipotle Blast Sandwiches
- 1/2 cup mayonnaise
- 1 to 2 tablespoons chipotle peppers in adobo sauce
- 8 slices whole wheat bread
- 8 (3/4-ounce) slices Land O Lakes Deli White American
- 12 ounces thinly sliced deli roast beef
- 1/2 cup (from jar) jalapeno slices, drained
- 8 slices tomato
- 4 leaf lettuce leaves
- Combine mayonnaise and chipotle peppers in food processor bowl fitted with metal blade or blender container; process until smooth.
- Spread 2 teaspoons chipotle mayonnaise onto 1 side of each bread slice.
- (Refrigerate remaining chipotle mayonnaise.)
- Layer 4 slices bread, spread-side up, with 1 lettuce leaf, 1 slice cheese, 2 slices tomato, 1/4 roast beef, 1 slice cheese, 2 tablespoons jalapeno slices.
- Top with remaining bread slices, spread-side down.
