Mexican Wedding Cookies Recipe

  1. Combine butter and 1/4 c. confectioners' sugar in mixing bowl with mixer till light and fluffy.
  2. Stir in flour.
  3. Stir in pecans till well blended.
  4. Using about 1 level measuring tablespoonful for each cookie, shape dough into balls and place 2 inches apart onto greased baking sheets.
  5. Bake in preheated moderate oven (350 degrees) for 15 min or possibly till hard.
  6. Transfer cookies to a wire rack placed over sheet of waxed paper to cold completely.
  7. Dust with remaining 2 Tbsp.
  8. confectioners' sugar.
  9. Store cookies in tightly sealed container at room temperature.
  10. These cookies can be placed in a freezer.
