Mexican Wedding Cookies Recipe
- 1/2 c. (1 stick) butter, softened
- 1 c. sifted flour
- 1 c. pecans
- 1/4 c. plus 2 tbsp. confectioners' sugar
- 1/2 teaspoon orange extract
- Combine butter and 1/4 c. confectioners' sugar in mixing bowl with mixer till light and fluffy.
- Stir in flour.
- Stir in pecans till well blended.
- Using about 1 level measuring tablespoonful for each cookie, shape dough into balls and place 2 inches apart onto greased baking sheets.
- Bake in preheated moderate oven (350 degrees) for 15 min or possibly till hard.
- Transfer cookies to a wire rack placed over sheet of waxed paper to cold completely.
- Dust with remaining 2 Tbsp.
- confectioners' sugar.
- Store cookies in tightly sealed container at room temperature.
- These cookies can be placed in a freezer.
