Skillet Choucroute with Potatoes

  1. Cook kielbasa in large skillet over medium-high heat until sausage is beginning to brown and some fat is rendered, about 3 minutes.
  2. Add onion and thyme.
  3. Cover and cook until onion starts to soften, stirring once, about 2 minutes.
  4. Add apple juice, broth and sauerkraut.
  5. Mix in potatoes.
  6. Reduce heat to medium-low.
  7. Cover and simmer until potatoes are tender, about 20 minutes.
  8. Season with salt and pepper.
