Spicy Bean Nacho Pie
- 1 tablespoon olive oil
- 1 onion, cut into wedges
- 1 garlic clove, crushed
- 1 teaspoon ground coriander
- 2 tablespoons fresh coriander, chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili, dried and crushed
- 1 teaspoon sugar
- 1 (400 g) can whole canned tomatoes
- 1 chicken stock cubes or 1 vegetable stock cube
- 2 (300 g) cans beans, drained
- 60 g tortilla chips
- 34 cup cheddar cheese, grated
- 14 teaspoon salt and black pepper
- 2 tablespoons sour cream
- Heat oil in a frying pan.
- Fry onion for 5 minutes.
- Stir in garlic, ground and fresh coriander, cumin, chillies, sugar and tomatoes.
- Crumble in stock cube.
- Stir in beans and simmer for 10 minutes.
- Preheat grill to high.
- Transfer mixture to an ovenproof dish.
- Scatter with tortilla chips and cheese.
- Season to taste with salt and pepper.
- Grill until cheese melts.
- Serve with sour cream.
