Apricot Beef Stir-fry

  1. Drain apricots, reserve 1/4 c juice.
  2. Cut apricots in 1/4 & set aside.
  3. In a small bowl, whisk the cornstarch, broth,soy sauce and reserved juice until smooth; set aside.
  4. In a large skilled or wok, stir-fry beef in oil for 3min.
  5. Add broccoli & onion; stir-fry 2-3 min longer or until veggies are crisp-tender.
  6. Stir sauce & to the pan.
  7. Bring to a boil; cook & stir for 2 Mon or until thickened.
  8. Add tomatoes & reserved apricots; cook until heated through.
  9. Serve over rice.
