Apricot Beef Stir-fry
- 1 can apricot halves
- 2 tbsp cornstartch
- 3/4 cup beef broth
- 2 tbsp soy sauce
- 1 1/2 lb boneless beef top round or sirloin steak, cut into thin strips
- 1 tbsp canola oil
- 2 cup fresh broccoli florets
- 1/2 cup chopped onion
- 1 cup cherry tomatoes
- Drain apricots, reserve 1/4 c juice.
- Cut apricots in 1/4 & set aside.
- In a small bowl, whisk the cornstarch, broth,soy sauce and reserved juice until smooth; set aside.
- In a large skilled or wok, stir-fry beef in oil for 3min.
- Add broccoli & onion; stir-fry 2-3 min longer or until veggies are crisp-tender.
- Stir sauce & to the pan.
- Bring to a boil; cook & stir for 2 Mon or until thickened.
- Add tomatoes & reserved apricots; cook until heated through.
- Serve over rice.
