Peppermint Meringues

  1. Arrange oven racks to divide oven in thirds.
  2. Heat to 225 degrees F.
  3. Line two cookie sheets with foil.
  4. In a large bowl, beat egg whites, salt and cream of tartar until peaks appear.
  5. Gradually add sugar and beat at medium speed for 5 to 6 minutes.
  6. Drop by teaspoonfuls onto cookie sheets.
  7. Sprinkle with crushed candy.
  8. Bake 1 1/2 hours.
  9. Meringues should look dry and white.
  10. Turn off oven.
  11. Keep door ajar and let meringues cool.
  12. Loosen from foil with metal spatula.
  13. Store loosely covered in a dry place.
