Corn Maque Choux
- 16 ounces white shoepeg corn (frozen)
- 18 cup butter
- 12 tablespoon flour
- 12 tablespoon garlic (minced)
- 14 cup onion (diced)
- 18 cup celery (diced)
- 14 cup bell pepper (diced)
- 14 cup fresh tomato (diced)
- 14 cup green onion (diced)
- 1 teaspoon parsley
- 12 tablespoon oregano
- 12 tablespoon basil
- salt
- pepper
- In a large skillet, melt butter and add flour, stirring until a paste forms.
- Add garlic,onions,celery and bell pepper.
- Saute until tender.
- Stir in tomatoes,corn, garlic, oregano and basil.
- Simmer for 10 minutes.Add salt and pepper to taste.
- Garnish with green onions and parsley.
