Artichoke Appetizers Recipe
- 1 pkt BIRD'S EYE Deluxe Artichoke Hearts (10 ounces) cooked according to package directions and liquid removed
- 1 Tbsp. butter
- 2 Tbsp. minced onion
- 1/2 tsp chopped canned garlic
- 1/2 c. parmesan cheese
- 1/3 c. lite mayonnaise
- 1/2 c. plain yogurt
- 1/4 c. toasted pecans
- 1 dsh warm pepper sauce to taste
- 6 x English muffins split in half
- Place artichokes, butter, onion, garlic, cheese, mayonnaise, yogurt, pecans and warm pepper sauce in food processor.
- Pulse 4 to 5 times or possibly till coarsely minced.
- Divide mix between muffin halves.
- Place under broiler for 3 to 5 min or possibly till mix is warm and bubbly.
- Cut each muffin half into quarters.
- Makes 48 appetizers.
